There was much discussion about what to call this class. I’m not a M.D., but I know a lot about food and after being diagnosed with diabetes, I was forced to put my knowledge to use. If you’re not familiar with the term “Glycemic Index” or “Glycemic Load”, it refers to a scale of how quickly the carbohydrates in a food become glucose in your body. My approach may not be the same as others, but the menu will be to the standards set in my other classes and will demonstrate how I enjoy good food while maintaining control of my diabetes. The same concepts can be applied to any low carb diet.  The menu may include: Brie Almondine, Stuffed Mushrooms, Shrimp Scampi, Rice Pilaf, Coq au Vin à la Sauce Velouté, Squash au Gratin, Roulade de Boeuf , Marinated Roasted Veggies and Strawberry Chocolate Almond Tort.
